For this old-vines cuvée, they prefer a vinification of 50% in barrels, of which less than 10% are new. This introduces a beguiling smoky tone to the familiar sandalwood scent of classic Chablis, from this throwback vintage that reminds old-timers of the Chablis wines of their youth. This is beautiful wine.
