Karanika 2022 'Cuvee Speciale' Extra Brut (Xinomavro - Assyrtiko)
Trained in Champagne, Laurens’ quest to make Greece’s finest sparkling wine was launched when he discerned the amazing aptitude for sparkling wine of Xinomavro’s high-acid grapes grown in limestone-rich soils. As their vineyards have aged and their expertise deepened, the wines have gained increasing depth and finesse, heightened by longer tirage, which enables lower and lower dosage (2 gm. here). The purity is breathtaking.
